Mozart, da Vinci, Voltaire, Marie Curie, van Gogh, Erasmus, Vasco da Gama, Columbus, Nikola Tesla, Charles Darwin, etc. Generally, any individuals whose discoveries/contributions/voyages etc. have benefited or can be enjoyed by all Europeans, as opposed to national heroes who would reinforce nationalist sentiment.

I would either something that illustrates European aim and values such as togetherness, fraternity, community, .... It could Be represented by abstract illustration the convo those ideas. Or, banknotes could be representing historical and key moments of European creation as well as integration. Pictures of events that occurred that had a particularly huge impact on Europe. It should not be too attached to one country.
if banknotes and coin were to include figures I suggest it would be people such as the EU pioneers: Schuman, Delors, Adenauer, Churchill (even if not in the EU, still played a major part in its creation). The problem would each nationality could not be represented. Or, it could feature EU officials that had an important impact on the EU development (BCE President, ....). I believe the reflexion on what should appear on banknotes and coins should be restricted to the Euro zone.

It should include the founding fathers of the EU
People that contributed to the development of the EU and famous buildings/constructions that are symbols of some of the EU member states.
the creation of the eurozone, creation of the european union, dates of some members entering the EU with a map of this country or an important building/museum/monument from this country. For ex: France, with the date and then the eiffel tower or Jean Monnet.
